This soup is so tasty, packed full of protein and fibre and ramped up even further with the goodness of chicken bone broth as its base.
I made this soup in France when the weather cooled, and have always found the French de puy lentils much easier to digest and love that they are incredibly delicate yet retain a firm bite unlike their counterparts.
This soup is a powerhouse of texture and flavour and sure to not disappoint! Delicious as is, or topped with fresh Italian parsley and chopped pistachio nuts.
Ingredients: A bit dressy Chicken broth, de puy lentils, bacon, onion, carrot, leek, celery, fresh spinach, spices, thyme, Himalayan Salt & pepper.
Refrigerate and use within 7-9 days. Can be frozen for up to 3 months, remove from glass jar before freezing. 2-3 servings ( depending on your appetite!)
