This is fast becoming a best seller with our A Bit Dressy community.
For those that love big, yet subtle flavours. Aromatic with Indian spices but not spicy, the fresh ginger provides the zing, and all the anti-inflammatory benefits too. Its creamy, comforting and adaptable.
Sometimes i'll add a drained jar of chickpeas or lentils, diced roasted veggies, a few handfuls of spinach, a bit more coconut cream, fresh lime juice and tons of coriander and there you have an easy vegan curry.
GARNISH TIPS: Serve as is with some fresh coriander or parsley. Add your favourite dairy dollop, simply delish with coconut cream swirled in once heated.
Refrigerate and use within 7-9 days. Can be frozen for up to 3 months, remove from glass jar before freezing. 2 servings ( depending on your appetite!)
