Such a healthy, hearty option, gentle on the system, yet packed full of protein and fibre.
I made this soup in France when the weather cooled, and have always found the French de puy lentils much easier to digest and love that they are incredibly delicate yet retain a firm bite unlike their counterparts.
A lovely vegan option with texture and all the health benefits you need. Delicious as is, or topped with fresh Italian parsley and chopped pistachio nuts.
Ingredients: A bit dressy vegan broth, French de Puy lentils, onion, carrot, leek, celery, cabbage, fresh spinach, kale, spices, thyme, ginger, garlic, Himalayan Salt & pepper.
Refrigerate and use within 7-9 days. Can be frozen for up to 3 months, remove from glass jar before freezing. 2-3 servings ( depending on your appetite!)
